Several options clearly indicated - Edit
The restaurant offers some vegan and vegetarian options clearly indicated, it is not really cheap but I guess it is okay for Switzerland.

Very nice vegan Swiss dining - Edit
This place has a pleasant cozy interior and several marked vegan options in the menu. We got the onion soup (delicious) “veganara” pasta (good with many veggies, chickpeas, and tofu), and the mushroom risotto (excellent). Would definitely come back here when visiting St. Moritz.
