Few options, not clearly labeled - Edit
It was fairly busy at the restaurant and at first it wasn't clear to us where to order the food. Turns out there's a few machines for the pastry shop in the back and a few other machines for Greens.

The vegan options are not clearly labeled but ingredients are listed in the details for each item.
I got one of the noodle dishes with wood mushrooms (I don't recall which dish exactly). It tasted well enough, maybe a little more spice would have been nice. Given the price I would have liked for the portion to be bigger, or for the quality to be higher. I know high prices are common in such spa restaurants but I would still like to expect more.

Food court smells really bad (like liver 😭)

Most of the food is not vegan, but you might find something in elysium at the end of the saunas where there’s another bar

I had vegan spring rolls (1 portion = 3 pieces) and tomato salad. Both were simple but tasty.
If you have an access upstairs I’d recommend to eat at “The Mango Tree” cause vegan options there are more interesting. But again spring rolls and a salad are much better than not having a lunch.
Vegan and vegetarian options are marks with the same label so you should ask about every dish.
Pros: Tasty food
Cons: Not 100% vegan, Same labels for vegan and vegetarian options , A bit slow service

Some vegan options, luckily!! - Edit
A brilliant water park with onsite restaurants. We were expecting to have to come out and order take away and eat in the car...but luckily we found some vegan options. Since the place is pretty isolated without any shops or other amenities around, I thought it's very important to put this restaurant on HappyCow, so the vegans visiting Therme can rest assured they won't starve.
