There’s vegan pistachio ice cream - Edit
You can choose the vegan pistachio flavor apart from the fruits and the chocolate ones, but the price is quite expensive. There are also vegan cones.

The pistachio sorbet was yummy but not amazing. It lacked a bit of flavor but still a good option!! They also had dark chocolate and fruit sorbets. They also have a labeled GF and vegan cone

Ice Cream in the City Centre! - Edit
Some very nice Gelato in Florence. Couple of vegan options such as fruit sorbets, but also Pistachio and Dark Chocolate. I went twice and had the Limone and Pistachio, both were absolutely delicious. Quite good value too! A cup of €2,90 is plenty for one person. Would Recommend!

The Best Pistachio Ice Cream I’ve Ever Had! - Edit
The other reviews have covered it, in terms of vegan ice cream flavours, but let me just emphasise the deliciousness of the pistachio ice cream - it was so so good. And I plan on coming back for more soon. Also tried the peach one, which was good too, but the pistachio stood out by far. If you can’t decide which flavour (and don’t have a pistachio allergy) then please try it! And enjoy a walk through Florence with this small cup/cone of joy in your hand.

The pistachio one has crunchy pistachio bits in it. And the flavour is really on point and not tasteless as pistachio ice cream sometimes can be. Also offers vegan and gluten-free cones!
