Few options with unusual flavors - Edit
This restaurant is one of the few in Lecce that does high quality sushi. Their vegan options are very good, probably a bit too pricy for the ingredients

Cute place, good food - Edit
A nice option to change a little bit if you are tired of having the same tomato oricchiette or marinara pizza. This asian restaurant has many vegan choices marked on the menu such as spring rolls, gyozas, sushi, miso soup, yakisoba or pad Thai. There are a few options of different noodles or rice dishes that can be veganized by asking to take the egg out.
