Certainly has a few options, some need adjusting or a decent dialogue with the waiter to clarify vegan preference, but its do-able and a few provides choices which is always preferred.
Ended up going with the Beyond Burger and it’s pretty difficult to mess that up, as you would expect it was good. Would be awesome if they implemented a special vegan house sauce or something to make their Beyond Burger a little more “Foolish Craig’s” style. Even still just a classic Beyond Burger always makes me feel satisfied so I’m not complaining!
For me they lost the 4th star with the lesser options and the need for slight adjustments.

Keep this in mind when you go, that way you will see how many options you really do have here.

The only other options here are to ask to sub-out the eggs in the burrito and one other dish - i can't think of the name. My husbands scramble had ham pieces in it the last time we came, so that is a real turn off.
tofu scramble, ask for no cheese, more potatoes instead. a massive helping of delicious sauteed vegetetables, plenty of tofu ( not the miserable little square which is so sadly the hallmark of many tofu dishes ) and choice of 5 kinds of bread. Huge, impossible to finish, enough for two, zesty and tasty. edit: this place also has the friendliest staff, cozy hipster attitude and atmosphere.
After having eated vegan breakfasts coast to coast this is th e king!

Well known diner among Boulder locals. Even this place is not vegan, the tofu scram with peanut sauce, greens and potatoes is very tasty. Great meal for a brunch out.
I've been going to Foolish Craigs for years, they have a full bar, tables and booths and lots of cool local art on the walls. I order veggie burgers sans cheese, a tofu scramlette, soups and salads there. They keep hotsauce on the table too. For laid back Boulder style I'd say go and enjoy yourself.
Foolish Craigs is one of those places you go to when dining with non-veg*ns - it's also more suitable for vegetarians rather than vegans. That said, I stuck with snack items such as chips and guacamole, hummus, etc. The guacamole was actually very good, but I found everything else to be average. My bf and friend really enjoyed their food items and even want to go back - going back is not on the top of my list however. Overall, FC's has a neat setup and they cater to vegetarians (not really vegans). So if your vegetarian and need to find middle-ground when it comes to dining, by all means try FC's. If you're vegan, I wouldn't bother.
