You have to get creative - Edit
I got the Em’s favorite salad without goat cheese and added an impossible patty for protein. It was expensive ($26) but in a terminal with almost no vegan options it did the trick!

But per the comments below, order with no cheese and no bun, as the standard is an egg-containing brioche bun. Still better than airplane food tho!

starving to death in LAX T5 and found this place. No vegan meals but French fries are confirmed vegan and hot and decent.

Decent option for a vegan burger at LAX T5 - Edit
Only place with an impossible burger. Need to order as a lettuce wrap to be fully vegan. Fries are solid too. Full bar as well with good drinks. Can order take out if you are running short on time between flights.
