Salads Galore - Edit
Today was my first time trying Evergreens, and I was pleasantly surprised. There was one labeled vegan option in the seasonal section and the build your own section. While they marked vegan options, most items were easy to guess if they were veg-friendly. I opted for the predesigned option called Soy Meets World, and it was delicious. It was filled with lots of fresh veggies, a tasty sauce, and some crunchy toppings. It was busy but moved very quickly, and the staff was very friendly. If you’re craving a salad or want something fast, this is a decent option. It’s also next door to the all-vegan Frankie & Jo’s ice cream, so you can’t beat that combo!

Good option at University Village - Edit
University Village doesn't look much like it did 25 years ago. Pretty upscale and sterile. This place is good for build-your-own bowls. I usually visit Sea-Tac location where it is THE option for vegetable eaters.
