Delicious vegan options - Edit
We ordered a takeout to our hotel and there were several clearly marked vegan options. We got the aloo saag, chana masala and pakoras, each one delicious and arrived a head of time!

It doesn't have to be Mexican to be a fabulous and authentic meal in Cabo - Edit
The owner, a friendly and enthusiastic Indian gentleman, opened in Cabo 8 years ago. His food is exquisitely crafted Indian cuisine. Linda and I shared a wonderful appetizer [? name] made in balls with cauliflower potatoes, onions, and other vegetables. Our main course, Chana Masala (w Chickpeas), was outstanding. The dessert was a wonderful blend of sweet mash with shredded coconut. Linda and I thoroughly enjoyed ourselves. Just tell them that you are vegan, and you are set.

Charming Indian restaurant with friendly owner - Edit
We tried this restaurant on our first night in Cabo San Lucas and were very impressed with the food and the staff. All dinner entrees come with appetizers, rice, naan and a crispy wafer - maybe khakra?, as well as dessert. The appetizers were delicious - three different kinds. The "naan" unfortunately was only a tortilla but the rest of the meal more than made up for this. My partner and I shared the chana masala and the owner suggested that for our other dish we try a zucchini/green bean based one to complement the protein from the chickpeas. Both were good, but the chana masala was by far the best dish. The vegan dessert is a chilled coconut-based ball, and really hit the spot. Altogether excluding drinks and tip it was 700 pesos.

Pros: great North Indian flavor, all-inclusive entrees, friendly owner

Excellent quality, ample portions - Edit
We chose Elements on the recommendation of our hotel staff our first night in Cabo, after we asked for vegan options nearby. We were so pleased with our choice. The dining space was open and inviting, and the service was friendly and accommodating. The owner talked about wanting to open a place that met the needs of vegans in the area, and he certainly accomplished that task! The vegetarian menu had a number of entrees that could be made vegan, I went with the chana masala that was already vegan. The owner also brought out a special vegetable entree to add to the smorgasbord. Three of the appetizers were vegan, and two out of three of the sauces were vegan. The breads were vegan, and the owner made a special dessert to be vegan. We had a ton of food that all tasted delicious. We were full but felt we ate healthy. We will be back during our visit.
