Good Italian food with their own goat cheese - Edit
Not many options for vegans, but vegetarians have lots of choice. Good pasta and lasagne! Different from most pasta in Cuba. They have their own goat cheese from a farm nearby.

The pasta didn’t have nearly enough sauce on it and had to request more. Cuba is not exactly a haven for vegetarians so just finding food to eat makes stopping here worthwhile

Mediterranean style restaurant with vegetarian and vegan options - Edit
This is one of the best restaurants in Cuba I have visited and I was there for 5 months. You can find vegan soups or dishes like paella, grilled vegetables or salads. We went there twice during our stay in Viñales. Highly recommended.
