A bit disappointing - Edit
There is a good choice of meals and everything is very fresh. The cold dishes (various salads, seeds, sprouts...) were very good but the warm meals were not so tasty. There is pretty much not information about what is inside which make it a bit hard to know what is vegan (or for allergies). The spot is nice and the staff friendly. Too expensive (120pesos) for a buffet in Mexico.

El lugar es agradable y vale la pena visitarlo. Los sábados por la mañana el menú es a la carta y hay música en vivo; recomiendo especialmente los jugos y licuados. El servicio es muy bueno y el staff siempre es amable. Me parece que es de esos lugares donde se hace un esfuerzo conciente por ofrecer un menú con alimentos saludables, no solo comida chatarra.

I finally got here on my last day in Guadalajara, and I most definitely will be back. The owner has created a wonderful atmosphere, and a large buffet with a great variety for P79 (US$4.26/$5.69 Cdn) in the afternoon - daily from 13:00-17:00 only.

It was difficult to understand, as there was no signange. Some patrons filled plates, some a large TV-dinner kind of tray.
There was quite a large cold section - mostly salad stuff. Overall, I prefer a much larger hot section, but I managed to fill my plate. There was too much gluten for my liking, but I know the world is just catching up. :)
There is seating for every mood, including a large garden space in the rear. There was a little waterfall in the rear and out front on the street. An open kitchen provided Enchiladas on demand. This rear space created a nice festive atmosphere, and on a Sunday afternoon it was complete with a wonderful young duo - a guitarist and flautist, playing Mexican classics.
I started with Mushroom Soup. It was the same as Planeto in Puerto Vallarta - except it included a lot more wild mushrooms - so it must be a traditional Mexican recipe. Relatively tasteless vegetables, but overall quite nice - albeit a bit salty.
Then I had Potato Latkes kinda. Again, a bit salty - but not oily. I offest those with some Sliced Beef-looking Seitan. El patron swore it was gluten-free.
The store had a nice array of freshly-baked muffins and breads, but all had gluten. Most of the pre-packaged store products had gluten. One line was a 'Vegano' brand (Vegan), but offered no list of ingredients whatsoever.
Pros: Created from the heart.
Cons: Too much gluten in both the hot buffet and store.

Ceviche is probably the best option, and you should save space for desserts!

Bitter Dissapointment: - Edit
First off, the Buffet only had (like) 7 options, including a rather poor salad of Iceberg greens. To my disapointment most of the stuff was fried, there were no descriptions as to what was what. The only drinks available were water and alphalfa juice, and the whole experience on a whole was a bit disappointing.

A Vegetarian Haven in Meat-Crazy GDL - Edit
I've been living in GDL for two months. This is a city of birria (goat stew) and torta ahogadas (pork sandwiches covered in spicy sauce). El Jardin is a refreshing escape from the city's meaty fare. The buffet is all-you-can-eat, with a good selection of salads as well as some hot dishes. I served myself a salad of mixed lettuces, red cabbage, shredded carrot and sprouts, topped with olive oil, vinegar and spiced seeds. On my second turn at the buffet I went for the warm food: lentil soup and a nutty rice pilaf that I topped with some of their fake meat products. The stand-out dish that I had with both courses was their soy ceviche, which is lime-marinated soy granules mixed with tomato and cilantro. It's best served on top of tostadas. For dessert, there were cookies and rice pudding. The only drinks I saw were Santorini water on tap and coffee to go with dessert. There are signs posted around the buffet promising that all the food is washed and disinfected, which is important here. The price was about 75 pesos ($7.50 US/CAD) and well worth it. My body thanked me for the healthy meal!
