Mediocre, few vegan options - Edit
Not a business that cares about vegans (or we might assume the environment or animal welfare). Very few options and little effort made - for example 12 cakes/pastries available, not one of which was vegan. I had a hummus box and some pre-cut fruit as it was early and those (whilst pretty much the only vegan things in EAT) were healthier than elsewhere. Outside of an airport EAT would be so overwhelmingly inferior to (say) Pret as to essentially not exist.

So quick, easy, and delicious! - Edit
If you want something fairly healthy but don't want to wait a long time, grab something from the fridges at EAT instead of waiting for a table at Wonder Tree or Leon. Vegan items are clearly marked. I really enjoyed the Vegetable Gyoza fusion bowl (they put hot broth in it when you check out) - definitely recommend adding sirracha. :)
