A tofu shop selling "yuba" (the skin that forms on soy milk as it is heated) - dried and fresh (sashimi yuba). Yuba is 50% protein/50% fat - one of the most protein rich foods available to vegans. Owners make yuba from pure local spring water, and 100% domestic sourced soybeans. Also offers "ganmodoki" which are tofu croquettes bound only by mountain yam (yamatoimo - instead of egg). Fillings include wood ear fungus, kikurage, carrot, ginkgo biloba and some may contain shrimp (ebi). Is also a gift shop. Open Mon-Sat 9:00am-1:30pm, 3:00pm-5:30pm. Closed Sun.

Delicious yuba and ganmodoki from this small shop

This was a lovely find in Shuzenji - we found dried yuba and fresh sashimi yuba. If you are in Shuzenji and visiting an onsen, then you'll probably pass this shop on the small main street. DO pop in... but check for anything that might contain shrimp/ebi. Otherwise most things in the shop are vegan.

Pros: Yuba, Lots of different types, Healthy - made from local spring water

Cons: So far away from me (UK to Shuzenji takes days)!
