Never pass up a chance to eat at Chuy’s! - Edit
Chuy’s is one of the best, consistently delicious, easily Vegan adaptable restaurants out there. The veggie enchiladas (sans cheese) with tomatillo sauce is delicious and extremely filling, so please come hungry! I’d give extra points if I could for the rice and refried (AND charro beans) being vegan as they are, no modification required! If I could give 5 stars I would!

Love this restaurant as the food is so good and fresh. There are so few Mexican restaurants that have any vegan options!

Vegan Hack - Edit
Mexican restaurants are not always the most vegan friendly, but a few queeks usually gets me there! At Chuy's my vegan hack is to order the chalupa and enchilada plate with the following modifications:
Read more- remove the cheese and chicken from the chalupa and have them replace with avo slices
- replace the chicken enchilada with the veggie enchilada with the ranchero sauce and no cheese
I had one of the food runners say, as he was delivering the plates "I don't know what this is but it looks delicious!" ... And it is!

I got the veggie enchiladas, no cheese, with cilantro lime rice and refried beans. The sides were great but the enchiladas were pretty tasteless. The filling tasted like steamed vegetables with barely any spices. I came days after storm Harvey ended so I wonder if the busyness caused the enchiladas to be lacking for whatever reason? There was definitely something missing. It was so bland!
Read moreHeads up, before you order, the server will come out with salsa and what I think was ranch for the chips. Ask to skip the white/ranch sauce if you're vegan.
