Disappointed despite good reviews - Edit
I’ve been vegan for 8 years and lived in Huntsville for most of that time, but we had never tried this place due to the lack of indoor seating. We decided to try it finally and it was really not good. The plates were large, but the food all tasted similarly. We ordered the southern plate, nachos and wrap. All 3 plates were filled with the exact same rice and beans. The southern plate came with corn bread which tasted a bit burnt or like it was made in a dirty skillet. It also came with plantain which was pretty good. The collards were undercooked. The quesadilla was burnt and black on one side. The nachos had almost no cheese sauce, mostly just beans and rice. All of the food was pretty bland which was surprising given the reviews. We also got a couple of the drinks which were just ok. It also took a very long time to get the food, about 30-40 mins. By the time we got it the building was closing and we had to sit outside. It’s really unfortunate because the other 2 vegan/veg places in town serve mostly greasy veggie burgers and fries and other very oily salty foods. So I was hoping this would be both healthy and delicious. I really wanted to love it but we won’t be going back.

Delicious Southern Plate - Edit
The atmosphere is relaxed at The Palate by Chef Will. The food is delicious and the portions are huge! I got the southern plate rice, greens, black beans, plantain, avocado, and cornbread pancakes. I definitely recommend stopping by!

A Fantastic Find! - Edit
This Jamaican food truck is parked outside Mill Lowe - a huge former cotton mill which has been brilliantly converted into art shops and studios. The truck only opened at 2:45pm and the star I’ve deducted is because of that and the very long wait after ordering (almost an hour even though we were second in the queue after he opened). It was 90% humidity and an incredibly hot place to wait so long. Anyhow, the menu was chalked up by the chef. He also had a guy sitting outside taking orders and keeping us entertained! As well as food, they also sold banana cake, special “teas” (with or without sea moss gel), handmade shell jewellery and a few books. I ordered the Jamaican plate, consisting of black beans, fried plantain, avocado, tomato salsa, cornbread, spicy greens and raw spinach leaves. It was huge, cooked fresh (hence the wait) and absolutely fantastic! Despite the wait I would DEFINITELY a return for more of this food.

The menu looks like it changes frequently. I had a portobello mushroom dish over rice. It was a HUGE portion and quite tasty too. I thought it was a kinda unique combo of ingredients but it works.
Read moreThis place is a food truck at Lowe Mill. It was a little difficult to find as an out of towner, but walking through the old mill was very cool and I'd like to explore more of that! The historic mill has a bunch of artist studios and little shops.

First time visit, can't wait for next time! - Edit
We just moved to the area and I've been dying to check out Chef Will. The reviews that say to not come hangry are accurate. There was a wait and the weather was cold... but the portions are big, Chef Will makes it up fresh, he understands how vegan food should be... so flavorful and good! The benefit of waiting to order and then to pick up was that I got to meet some good people and the sunset was beautiful. When we got our food, my entire family was silent- that's how you know the food is really good.

The food here is amazing. Please don't rush perfection. The service is made to order from fresh ingredients so when you arrive expect to wait as the chef works his magic. Just so you know the wait is completely worth it. Reasonable price, more than enough in serving and if you don't know ask about his bee sauce (I think thats what its called). Vegetarian and vegan friendly one of the best places to order when you're not in the mood to cook.

I was in town briefly and decided to support this food truck during lunch one day. I arrived at about 1pm on a Friday. Thankfully GPS led me to the right place, it’s kind of a deserted old mall, I almost thought I had gone to the wrong place. I decided to drive around and make sure I didn’t miss it. It would have been pretty easy to miss it actually, the truck itself looked kinda worse for wear. In addition, it was closed. I was disappointed since I drove out here and the app said it should have been open. I tried calling the phone number, received no answer.

Yummy! The whole Lowe Mill is recommended, and if you are already there try out Chef Will's. It's a neat food truck vegetarian only offering vegan options. There full menu is not always available but a hand full of options. I had a vegan Portobello Wrap with his special Bee Sting sauce - very good! It was a lot - I usually can eat a lot and I haven't eaten the whole day, but only managed to finish 50 % so you get plenty good stuff for little money. I hope I can try out the spring rolls soon which weren't on the menu this day.

Chef Will's food is amazing. We tried the black bean tacos and the portobello and quinoa entrees. The total cost was $17, but the food was higher quality than I've had at "fancy" vegan restaurants. Chef Will customizes to your preferences. If you are passing through Huntsville you have to stop by to try this food!

If you're ever in the area I definitely recommend visiting Chef Will's food truck! It is SO good some of the best vegan food I've had yet. I have eaten there multiple times and have never been dissatisfied with a meal. I live an hour away and happily travel the distance to get some yummy grub!
