NW chain that has solid healthy options - Edit
Springfield, Oregon has no vegan or vegetarian restaurants, but if you’re in the city and need a quick, healthy vegan option, Cafe Yumm hits the spot. Most items on the menu can be made vegan and they welcome the changes. Also their Yumm Sauce (although not for everyone), can quickly become your favorite condiment. Their bowls are largely bean and brown rice bowls with assorted vegetables. Tofu can be added.

The food was good and enjoyable once we got our order corrected. It’s also nice they have Covid health & safety procedures well established. The chef a little inattentive.... so Just be sure to check your to-go orders before you leave the location.

Lots of Vegan Options - Edit
I stayed in a hotel across the street from this place, so it was my go-to all week! The southwest wrap veganized was amazing, as well as the veggie burger, tofu skewers, and tempeh skewers. Staff was knowledgeable and helpful. Highly recommend!

They mess up orders then blame you for not checking when you have confirmed with the cashier that you asked for it made a certain way.(ie vegan). Go to the walmart market on the other side of gateway and buy better options.

I really enjoyed my vegan Yumm bowl. When my dish arrived, I thought it was going to require some sauce to give it flavor. I had not realized that the sauce was at the bottom of the dish. the Yumm bowl was very flavorful without being overpowering. Really hit the spot. The staff is really nice and helpful.
