Would have loved to try their bagels - Edit
Unfortunately by the time we got there just an hour after they opened they were out of their vegan bagels and they wouldn’t allow me to get a vegan sandwich instead because it wasn’t lunch. Luckily they had a farro salad on special that was available and could be made vegan. It was alright but had a little too much dressing.

Charming and limited - Edit
We went for breakfast/brunch. Only two vegan sandwich options- sourdough bagel with avocado, tomatoes and cucumber or basically the same with hummus. We had the first and it was good, and what I based my rating on. They also had oatmeal made with oat milk.
Read moreThere were no vegan pastries. They do sell their sourdough loaves, which we were hoping for.
Pros: Make their own sourdough bread, Sell the loaves of sourdough bread
Cons: Only two “breakfast” sandwich options on the menu, No vegan pastries

Good flavors - Edit
While looking for baked goods, I lucked into finding this bistro with vegan options in this small Texas town. I bought the roasted vegetable sandwich (served on vegan bread) minus any cheese/dairy and it was delicious. I also ordered freshly-made apple-beet-ginger juice and a kale salad to go. Enjoyed those, too!

Cons: Smallish portions for the prices..., ...but this IS a tourist town.
