Good find right near the Vatican Museum - Edit
A surprising undocumented find right near the Piazza del Risorgimento and close to the Vatican Museum entrance. Unlike one nearby documented restaurant that has literally one vegan option and all they do is pizza so seriously.... this restaurant has a clearly marked section on the main menu with vegan options. There were also some other options on the main menu that would be vegan as well but are pretty main stream such as Spaghetti with olive oil, garlic and chilli flakes.

The Bruschetta was very nice, one large slice of bread cut in half for us to share. Good amount of topping.
The Panzanella was a surprising dish, I had expected sliced cucumber, some sliced tomatoes, red onion and some bread sort of a lite fresh snack plate. That was not the case. What came, was a well presented tower of the listed ingredients in 1 cm cubes that had been braised and was brimming with flavour. It had black olives in it and this flavour was pervasive throughout. The bread was fried croutons that gave it a very nice crunch, 5 stars for this dish.
The pizza looked underwhelming with a tomato base and some grilled zucchini and eggplant on it but as per most pizzas in Italy, they all taste good. It was very nice and a good size, we enjoyed it and ate the whole thing.
Quiet street, we came here for lunch and it wasn't crowded but it was bang on 12 so just the start of lunch.
