I had reservations about eating here but we went anyway. The restaurant was inside a building shared with a gas station store. Basically a truck stop station with a cafe. The wait staff do not speak much English so asking for vegan options was a challenge. I think we managed to communicate “no cream” to get as close to vegan as we could. I opted to look online for vegan Indian food to help me select from the menu. I got the two items in the posted picture - a dish with eggplant and chick peas and rice. The waiter offered us tea (Indian chai) and I agreed but learned it was made with cream. We also got the garlic naan and it was a hit with my aunt. The dishes were more than plenty and very very delicious. I’m hoping to catch the buffet next time around and hope there will be more options to choose from that are vegan by gauging it visually.

Tried Bombay Truck Stop Restaurant when everything else was closed. Made phone order for takeout, and was told it would be ready in 25 min, but it took 40. And when the order finally arrived, the tandoori roti that I had ordered without butter came drenched in butter, so it took another 10 minutes to have that replaced.
That said, the baingan bharta (smoked eggplant) was tasty.
The baingan bharta was very good. It came spicy, the way I like it. They also had a cucumber, bell pepper and potato salad that was very good. The garlic naan was good. We asked for it without ghee. They put it on anyway. It is in a truck stop. So it is not fancy at all.
Bombay is really good! There is really good for a small town and the vegetarian while small is good. And there are not too much bad things about this restaurant. Just the restaurant could look better but that's it! The photo was posted by Singh Preet on Google maps.

Ordered without butter, got butter anyway - Edit
