    Gently warm the soya milk in a pan whilst stirring with a wooden spoon until just below boiling point.
    Take off the heat then stir in the juice of one lemon until curds and 'whey' are formed. The soya milk should completely split.
    Strain the mixture through muslin cloth and press, ideally using a tofu press, or heavy objects.
    Place in fridge for it to firm and voila, you have fresh tofu!

    Ingredients

    1 litre carton soya milk
    1 fresh lemon

    Serving Size

    2 portions of tofu

    Prep Time

    10 minutes cooking, 3 hours leaving in fridge
