    Instructions

    Start by making cucumber noodles with a tool of your choice (e.g. spiralizer), and put it in a bowl. Add the amount of chopped lettuce you would like.
    Make the dressing using a blender. Pour in the mango, avocado, spring onions, rosemary and lime juice. Blend until smooth. You can add more of each ingredient to adjust to your taste preference.
    Mix it well in the bowl with your cucumber noodles and lettuce. Sprinkle with freshly cut coriander and enjoy.

    2 cucumbers
    1-2 mangoes
    1/3 avocado
    4 spring onions (white part)
    Lettuce, chopped
    Rosemary (fresh or dried)
    A handful of coriander
    1 lime, juiced
