Easy Mexican Red Rice

    Instructions

    Place rice in a pan (with a lid) and add oil.
    Fry the rice for a few minutes on medium heat, until the rice gives off a scent and is slightly browned.
    Turn heat to low and add liquid, cover and cook for 25-30 minutes.
    Cook until all the liquid is absorbed, stirrinhalfway through. Fluff before serving.
    Optional: Add a squeeze of lemon to the rice.
    Enjoy!

    Ingredients

    1 cup of white rice (Basmati is best because of the depth of flavor)
    1 tablespoon of olive oil (canola oil can work too)
    1 and a 1/2 cups of tomato sauce
    1/2 cup water
    Lemons (optional)

    Serving Size

    3-4 people as a side dish
