Good Indian/Himalayan dine-in and takeout. - Edit
It's easy to order at Zimbu because the vegan items, as well as the gluten free items, are clearly marked on the menu. Almost all of the food is out front on display letting you see what you're ordering. The food is also prepared in front of you. If you're curious about the flavor or spiciness of any item, samples are offered for you to try. If your sensitive to spicy-hot food, be aware that there are a lot of spicy items. I ordered a rice bowl with chili tofu and coconut sauce. Both the tofu and sauce had hotness that I'd rate 4/10, which to me is hot but tolerable enough to still enjoy the food. I enjoyed my meal as did the other non-vegans in my group.

Great vegan options - Edit
We really enjoyed our lunch. We had the spicy tofu in a noodle bowl and a rice bowl. Not sure if the noodles we’re vegan. Samosas and spring rolls were also vegan. Great service. They also have a location in City Creek food court.
