Best I found at IAH - Edit
With long layovers at IAH in both directions on a trip from the US east coast to Mexico, I spent a lot of time searching the terminals, and Yume was the only place I found that offered a clearly marked vegan option, along with several other dishes that appeared to be vegan from the ingredient list. I ordered the Thai Style Vegan Ramen which they currently serve with bamboo shoots, mushrooms, edamame, radishes, and carrots. The dish was tasty and seemed healthy too, though I would have preferred less noodle and more of the other ingredients. Service was prompt and friendly, and I liked that they had ample seating with charging stations at all. On the pricey side -- but hey, it's an airport.

If, like me, you are desperate for vegan food at IAH, this is an option. It's not a very good option, but it doesn't have much competition. I had the ramen, and it was... ramen. It's ridiculously overpriced for the quality. But it is food, and it is explicitly marked as vegan. In retrospect I might have gone to Subway though.

vegan food in terminal E of IAH - Edit
You will find vegan food at this restaurant. It is not the best food, or the freshest food, nor is it very reasonably priced. But if you are walking through the Houston International airport smelling nothing but animal fat on a grill, then you can take reprieve here. It is located in terminal E, across from gate E11.

Right outside gates E10 and E11. I ordered a tofu tomato salad and it came with lots of avocado! Also got veggie fried rice without the egg and edamame. Not bad for a busy travel day. The food also came in 20 minutes and I could take it to go.
