Several vegan rolls (avocado roll, etc). Not take any more options than a typical sushi/Japanese place, and crazy expensive. The avocado rolls were $10 for 6 tiny rolls. The udon (not sure if it’s vegan because we didn’t order it) was $28. Seems like most food is super expensive in Vail and there aren’t a lot of vegan options, so this place is fine if you don’t mind paying a lot.
Didn’t have reservations, but we were able to sit at the bar. As long as you do NOT get the tempura batter, which has egg in it, many of their items become vegan. The plus is that this is a much healthier option. The staff and the sushi employees were very familiar with vegan. Their attention to detail, included asking if we wanted sesame seeds to assure that we were not allergic, was appreciated. There’s other things that they did to show that they really cared about our experience and cared about each other. We had several different rolls and our server, Phoebe, made some great recommendations. Friendly and knowledgeable staff.
Spoke to a young gentleman, who appeared to be the manager, about having a section specifically for vegan since they can already make many of their options vegan. He seemed very open into making that happen. Finger crossed.

Fine but mind blowingly expensive - Edit
