Delicious (but limited) vegan options - Edit
They had a good selection of vegan options for brunch, including a JUST egg vegan breakfast taco with vegan chorizo and cashew crema, a vegan breakfast bowl, an impossible burger on a vegan sesame bun, and vegan impossible puffy tacos. Nice to see a vegan option in each category of the menu. Our table got one of each of these items and they were all excellent, my favorite was the vegan breakfast tacos.

West of Pecos - Edit
I don't normally review places immediately after eating at them, but this place was a huge letdown. I appreciated the fact that they offered a vegan option "seasonal vegan plate" but it was not very creative, and the only part of it that was creative was gross (broccoli). The dish was comprised of plain black beans, plain green rice, plain grilled corn on the cob, and broccoli with super odd and confusing flavors. The guacamole was very disappointing too. I actually feel queasy after eating here and would not recommend it to my friends....it's also OVERPRICED.

Meh - Edit
Puffy tacos with Impossible burger filling? Sounds good. But the filling was overdone and the tacos were really not very puffy. Good guacamole though.

1 amazing vegan entree - Edit
West of Pecos is a nice restaurant. Their dinner menu currently has one entirely vegan entree, the grilled vegetables. It sounds boring, but i promise it's not! It's a huge and filling dish with lots of different flavors and textures. You won't be disappointed. They have great drinks too. Apparently there is a vegan breakfast bowl too, so I would assume they have one vegan dish on their lunch menu too. The cashew cream is to die for. So, they don't have a variety of options for vegans, but if you're in town for a minute and just going once, you should be satisfied.
Read morePros: food is really good, huge portions, beautiful setting
Cons: only one vegan dish per meal, chips and salsa are not complimentary, dairy cheese smells really strong
