Best Vegan Sandwich Ever! - Edit
This place is well deserving of all the amazing reviews. We sat outside and it was so cute. I ordered the Brie and Turkey sandwich on a baguette and was almost brought to tears!!! The bread was so soft and fluffy. My fiancé got the buffalo tofu sandwich which was also incredible. Ordered a cup of seasonal soup. Best place we ate in Denver for sure.

Imaginative, gourmet, tasty vegan dishes and great service - Edit
All-vegan menu and not your usual vegan fare. Every item is clearly marked whether it's free of—or contains—gluten, soy, or nuts, and the server was knowledgeable and sensitive to other dietary restrictions, including my own preference for dishes made without coconut or coconut oil. My eggplant and mixed mushroom ragout with a crispy-fried block of polenta, pickled fennel, black garlic balsamic, and "parmesan" was spectacular, a subtle combination of sweet and umami, creamy and crispy, that I've never experienced before. My other half thoroughly enjoyed the oyster mushroom po' boy. For dessert we shared one serving of strawberry shortcake cheesecake, which was a delicious, not-too-sweet, part chewy and part light and creamy creation plenty generous enough to satisfy both of us.

Underwhelming - Edit
First, the server may not mention to you that they do the 20% included thing at this location. I found this shady as we ended up tipping 20% twice since he just took the card without showing me the bill, ran it on his tablet, and flipped the tip screen around to me like it was expected of me to tip.
Read moreAs for the place itself, I found is pretty underwhelming, along with the other veg places owned by this group. Friend and I collectively ordered the tofu buffalo sandwich (1 star tbh), loaded ruffle fries (2 stars), mac n cheese (2 stars), lavender lemonade (5 stars tbh), and the gnocchi (5 stars tbh). The desserts here are all made by make believe bakery down the road, which is also find mostly underwhelming.
Pros: The gnocchi & lav lemonade did slap, Its vegan
Cons: Possibility of shady servers with tipping practic, Most of the food is underwhelming, A bit pricey for what you get

I ADORE Watercourse! I stop here ever time I’m in Denver. They have a plethora of vegan options which are all delicious. Staff is friendly and very knowledgeable. Most entrees are large enough to make a second meal or split with another person.

Delicious food and outdoor dining - Edit
Had the Cuban and fried cauliflower 2 piece. Both of which were delicious. The Mac and cheese needs work. It was too saucy and the flavor was off IMO.

Sooooooo good! - Edit
Lots of menu items that vegans don’t always get to partake in! The Caesar salad was outstanding, the chorizo and grits was really yummy too, and the turkey and brie sandwich was out of this world. We also had a pretzel and it was really good too! The only thing we weren’t huge fans of was the cheesecake…it was almost like a flan consistency instead of a more creamy cheesecake. We also had the German chocolate cake and that made up for the mediocre cheesecake.

Disappointing - Edit
I had wanted to try this restaurant for quite a while. I was disappointed with the food. The cauliflower wings were great. However, the entrees lacked in flavor. The risotto was bland and undercooked. The gnocchi in sweet potato purée was bland as well and had a consistency of baby food. The yellow beet salad was good but, also lacked in flavor. The lemon cake was delicious. We waited for the server to come. Had to ask for napkins, water, ice. The 20% service fee is ridiculous! For that reason alone I won’t be back. I agree that employees should get a fair wage and that should be the employers responsibility! 20% service fee 20% tip is ridiculous and over the top expensive. The Food and service just isn’t worth it!
Read morePros: Some tasty dessert options
Cons: Expensive after the restaurant adds a 20% service, Service lacked, Food was bland
VagrantVegan
The 20% service fee IS the employer taking responsibility. That is how they raise the price across the board to ensure a living wage.
Read moreVagrantVegan
There are other models of creating living wages for employees, but they all mean raising prices. If they didn’t have the service fee visible, it would just be integrated into the regular price.

My wife and ordered the sweet potato cinnamon roll to start and it was great! We then shared the Chicken and Biscuit and the Oyster PoBoy with a side of Mac n Cheese. All were delicious! Our waiter, Patrick, was very nice and helpful! If you are in the area, don’t hesitate to stop in!

This place is incredible. We had the charcuterie plate, gnocchi, and risotto and all were unique and delicious. The menu is huge so you probably will find something you like.
