Excellent Understanding of Flavor - Edit
This was my first stop when visiting Denver. I had the bahn mi tacos and the sunflower risotto. Both were delicious, well-seasoned, and well-balanced such that I'm confident everything there is probably delicious. Very filling and great textures. Extremely nice staff, as well!

Fantastic Denver welcome - Edit
After a long day of travel into Denver Airport this was an easy on and off from Highway 70. Order first and then wait for them to bring your food. We had queso with nacho chips, Korean BBQ, salad, soup of the day. Fresh and friendly, can’t go wrong. And a hip neighborhood with all kinds of coffee shops, artsy!

This is a great place if you are looking for a healthier option you should head here! Super fun place the atmosphere is great. Not all vegan, but can make 99% of the menu vegan and the staff is well informed on what vegan is.

Had a late lunch here on Mar 12 — our second in 2 years. B had the Vital Cobb salad, vegan style (sub tofu for egg); it was ginormous & shared with J and we loved all the yummy components. And a delicious PB tahini cookie split for dessert. J had the best “queso” & chips he says he’s had in ages, better than the prior weekend in Texas — along w/ buffalo style broccoli & cauliflower and a sandwich made vegan by subbing the Havarti for another.

What a great spot! Great food and desserts almost all vegan or can be. Staff was helpful and this is a nice laid back place, order at the counter and find a seat. Had some soup and a beet brownie, yum! They have a grab and go case too.

Almost everything can be made vegan here, except for the sunflower rissoto arancini that I wanted to try. Got the bahn mi tacos, yuca fries with banana chimichurri, and a tiramisu. Everything was awesome! But I wish they had vegan cheese to stuff the rice balls with.

Vital Root is one of my favorite Denver restaurants! They have many delicious options. What is not totally vegan, can be made so. They have a great happy hour everyday with reduced price options. Make sure to try the sparkling water on tap!

The atmosphere is relaxed and unique. Nice choices although not a huge menu. Order and pay at the counter, food brought to your table. Fairly small portion so you will need something else if you hungry. Sweet potato fries are a great addition.

Everything about this restaurant is great. From the person at the counter we ordered from to the look and the amazing food. We had brunch. Tofu scramble was great with lots of flavor, the soup of the day was perfect on a snowy Colorado day and the vegan Cobb salad was unreal with coconut bacon bits, quinoa and so much more. A crisp glass on Sauvignon Blanc round off a delicious brunch!

Creative amazing food next to Cat Cafe - Edit
I've been lucky to have eaten at many famous veg restaurants. This is one of my favorites. The menu is something like modern American fusion with an emphasis on vegetables (not much fake meat vegan facsimiles here). The Bahn Mi tacos are great. The decor is great, very botanical, but not sickeningly Instagramy. It's just a few doors down from the Denver Cat Company (they allow people to bring outside food in, have adoptable cats, board games, cozy atmosphere).

I LOVE this place. It's semi-casual dining - you order your food and pay for it, get a number, and they bring it to your table when it's ready.
Read moreThe place is 100% gluten-free and the taste is 100% yummy. I have never had anything I didn't love here. My favorites are the happy hour avocado tacos, the falafel wrap, and the pad Thai. Oh, and they can make all by a few items vegan upon request!
Their desserts are also quite yummy, and not cloyingly sweet. The beet brownie is very cake-like and earthy which is a nice change from overly sugared brownies.
Another reason I come back often is that the staff is incredibly lovely. Their management team is on top of any issues and works to be sure that everyone feels welcome and satisfied.
They also have a lovely little courtyard out back which is cozy and inviting.
I highly recommend a trip here!

I stopped at Vital Root on my way out of Denver and ordered both lunch and dinner. The food was amazing and the staff incredibly friendly! When I return to Denver, I will go back and have the full sit-down experience.

Loved visiting vital root- had a hard time not ordering everything on the menu but agreed on the avocado toast and Japanese sweet potato with my hubs. Both were delicious and so fresh. 2 vegan energy balls for dessert and we were full and happy. Loved the vibe, the design and just all of it.

I tried Vital Root for the first time in a recent trip to Denver and will definitely go back. It's a casual place, order and the counter and they bring it out to you. The vast majority of the menu is vegan or can easily be made vegan. I had the ramen and my husband had the banh mi tacos, and we were both very satisfied. The ramen comes in smaller portions than is typical, but also cost less than is typical and is a more reasonable amount of food than is served at ramen places. They offer a small selection of take away items as well.

A server from another vegan restaurant told me this was her favorite place. We took Uber to the other side of town, and it was worth the $ for the ride. We had the Korean Stir Fry and Banh Mi Tacos. The stir fry was my favorite. Great combination of flavors. I enjoyed being introduced to yam noodles. We also had not 1, but 3 chocolate desserts--all were great. My date willingly explores vegan restaurants because he is finding his chocolate obsession is often satisfied. We plan to go back for brunch.

So much confusion over what was vegan and what wasn't... the cashier had to go talk to the chef about multiple items in question. Extremely small portion sizes, even for the main courses. We tried the veggie burger, hijiki salad, and chilled edamame noodles. The burger was good, but all of our food was pretty greasy. Overall the atmosphere is awesome but it's extremely overpriced for what you actually get.

I have to say, the raw beet ravioli was one of my favorite things I have ever eaten. I also enjoyed the Bahn Mi tacos while here and a beet/tequila drink. The food is amazing and I really enjoy the flow of the space, the way in which you order and grab your own drinks/silverware. It reminded me of some of my favorite European restaurants. I will say that the menu is more expensive than many would prefer to pay for the amount of food served, though I understand the prices when taking into consideration the model of the restaurant.

When I walked into this restaurant, I was greeted by everyone. One of the waiting staff recommended that I get the vegan risotto, the raw ravioli, and a banana ice cream for dessert.
This is one of the best meals I have ever had! The ravioli was gorgeously presented, and having been a raw foodist for years, I can say that this raw ravioli is up there with the best I have had! The risotto was perfectly flavored and salted, and the vegetables were cooked to perfection. As if I wasn't elated enough with my meal, out came the vegan banana ice cream. This was the perfect ending to meal: creamy, not too sweet, and just decadent.
This is not only the best dining experience I had in the Denver area, but this will be added to my top restaurants in the world list.
