I was in Denver for 4 days, and I intended to try as many vegan restaurants as I could. But this place was so good, I ate here 3 times.

Something for everyone!! Came here with veg and non veg friends and we all had amazing food and a good time. Staff is super excellent and friendly and the food is great. Can’t say enough good things!

I got nachos with the daring chikn and my partner had a blt wrap. Both very yummy and we had left overs. Also had the tiramasu for dessert. This place was good.

Very happy to have found Vital Root…a great stop while in Denver the food is delicious and the staff is super nice. I especially enjoyed the root vegetable Reuben. It’s super cute inside and out.

They have some very solid dishes, but quite a few underwhelming ones as well. For the elevated prices, I’d hope for more consistent quality.

Everything I’ve had is so delicious - the wrap, the stir fry, the “chicken” and waffles. I dream about their food. A little on the pricey side for the portion size but it’s worth the splurge as a treat! I will say the vibe is very casual so not the best for a fancy date.

I was expecting a little more. I ordered the beet Ruben and I guess I thought it would taste like a Ruben . It was good but it tasted like a beet sandwich. My friend really liked her chickpea dish and my sister kinda liked the banh mi tacos.

This place is great! Lots of vegan/veg options to choose from. The entrees are great but my favorite things are the starters. Their desserts are amazing as well. One time when we went, they accidentally gave my partner the vegetarian option instead of vegan though.

Vital Root advertises as 99% vegan, which could mean anything. They told me that they can make anything on the menu vegan (with some substitutions) except for the cheesecake. 5 stars for options and ambiance.
Read moreService is simple, walk up to the counter, order, they bring the food shortly. It's a self-bus environment, grab your own napkins, forks, water and clean up after yourself when you leave.
Tried the Chicken & Dosa Waffles with Yucca Fries. Not sure I would do that again, it was an interesting flavor blend but points for creativity.
Environment was chill, they opened the sliding door once the weather cooled down to allow fresh air in from outside.

Love. Love. More Love. So good. So fresh. So wonderful. So kind. Great choices. I love it so much. The country fried tofu needs to become a full blown side option. It’s on the kids menu, and I still order it but it’s so good. Everything here is so good. The best. Stop here every time I’m in Denver. Lovely vibe.
