Lots of healthy options (soups, large salad buffet, falafels, quinoa gratins), not everything is vegan but it was easy to fill up my plate with both cooked and raw food. Quite pricey for Bolivia, you pay by weight (except for soups).
Amazing vegetarian buffet three blocks from the Plaza 24 of September. The food was 49BOB a kilo in May 2014, rather high for Santa Cruz, but worth it. Lots of varied options, a huge salad bar, and a large assortment of drinks. Most of the food is vegan as well.
Like most restaurants of this type, it's good to arrive closer to lunch for a larger and fresher assortment of food, however this restaurant doesn't seem to run completely out by 2:45pm, like others do. Friendly staff and patrons too!
Like many places in Bolivia, the restaurant doesn't appear correctly on google maps, but it's right in centro.
This is a "pay by weight" buffet--a little bit expensive for Santa Cruz standards at B$45/kg (about US$3/lb) but has good quality food. They have a mix of dishes, Bolivian, Chinese and Italian, including some with mock meat, plus salad and soup. They also have vegetarian salteñas (Bolivian empanadas). Note that their hours are 9 AM-3 PM Mon-Sat.
