Scant Vegan Offerings - Edit
Urth Caffe is mostly for non-vegans. The Spanish Latte is delicious and can be adapted to vegan. Parking has a fee, so I’m not sure it’s worth the visit for the hassle and cost. Atmosphere is California pretentious, but not as friendly.

Tastes like the "real thing" - Edit
I got a Spanish cold latte and the huevos rancheros burrito. (Breakfast burrito) can be made 100% plant based with vegan meats, egg and cheese. Everything I got, I couldn't tell it was vegan.

Solid off the strip breakfast option - Edit
The location is new and closer to Red Rocks, built around a courtyard. Street parking and a structure are available.

The food and ambiance were great and we avoided the strip traffic!
Pros: Vegan egg substitute , Almond cheese substitute , Bright and cute atmosphere
Cons: A little pricey, Less options than the Wynn location
