Such fun - Edit
This place is a lot of fun. I thought that they had plenty of vegan & vegetarian options. We went twice and I think that we tried almost all the vegetarian options. They had a good variety of veg rolls. We ordered edamame (both salted and chili sauce). Miso soup, sweet potato tempura (vegetarian), pickled rolls, various vegetable rolls, rice, and more. They have a pretty good drink menu too, I ordered a non-alcoholic beer (a neat find!). I also ordered a non-alcoholic Yuzuri, a citrus liqueur handcrafted from freshly harvested Japanese yuzu, rice, and pure mountain water. A really fun experience and very inexpensive, roughly $35.00 for both of us.

Vegetarian food - Edit
This restaurant’s highlight is that the food delivered on a shinkasen train. We ordered cucumber sushi, corn mayo roll , honey soy sauce fries, sweet potato tempura, edamame, seasoned egg. My personal favorite is the corn mayo roll, honey soy sauce fries and tempura.

Worth a try - Edit
There aren't enormously many vegan options but you can find at least 4 different sorts of maki as well as inari, nigiri with grilled corn, edamame and frozen grapes as a dessert (and those were awesome!). I left the restaurant well filled. Also, the food comes on miniature Shinkansen trains.

Cons: Limited (but still enough) vegan options

Better sushi train restaurant - Edit
Out of all the sushi train chains I’ve been to I think this one is the best. Although limited options it is just a little extra, and soy meat options are a bonus.
