Vegan menu, so flavorful and friendly! - Edit
We had the vegan Chana saag and “tofu chili” and it was all delicious. The rice they serve is perfect and flavorful as well. We also had a vegan mango shake which was a very sweet liquid treat. Would give five stars if possible, but I can’t since it’s not a fully vegan restaurant. The service was so very friendly, informed and humble. There are many vegetarian options on the regular menu, and a separate vegan menu.

A first for me in Denver, an omni restaurant with a separate fully vegan menu. You need to ask.

With a 1-5 heat rating, I went for the center, at 3. Chana saag and vegan roti (there is all paratha listed as well).
Creamy dishes do well by going up to 4, I think. The flavor was fresh, complex and rich, as a good saag should be. Coconut is used in place of dairy, and the recipes are traditional.
Very good portions. I have another meal in my fridge, and I paid less than some other Indian restaurants locally.
I sampled dairy and vegan, and found it amazingly similar. Vegan is a touch lighter feeling.
Pros: Separate fully vegan menu, Excellent service , Flavor profile vegan to dairy is very close
Cons: Parking lot, TVs in restaurant (off at lunch)

It won't let me do 5 stars cause it's not 100% vegan, but I would if I could. They have a whole separate vegan menu available if you request it. A ton of options. Very knowledgeable. Extremely clean and so friendly. I got the vegan samosas, vegan fried rice mild, and vegan chi tea. HIGHLY RECOMMEND!

Brand new and tasty - Edit
What a surprise to find a local Indian/Nepalese restaurant (recently opened, very clean) with an extensive, separate vegan menu. This is the first Indian restaurant I've come across which has tofu on the menu. As a result I was able to enjoy a delicious Saag Paneer, with tofu substituted for the cheese. Nice place!
