Above average selection and very tasty - Edit
Ume has a much larger selection of vegan/veggie sushi than any other sushi restaurant in the area. In addition to the usual Kappa Maki roll (cucumber), they also do avocado, asparagus, spinach, Japanese squash and shiitake mushroom rolls. Then there are Umekyu (cucumber, pickled plum, shiso leaf), Natto (fermented soybean, wasabi and scallion) and Oshinko (pickled radish). You can also get strictly vegan Nigiri (veggies only, no rice)--grilled eggplant, zucchini, golden needle mushroom, squash and Wakame (marinated seaweed). Finally there are two larger specialty rolls the No Rain Forest (cucumber, squash, gobo) and the Bamboo Stick (Yam, gobo and avocado). The yam in the Bamboo stick is tempura, which typically is an egg containing batter. The remainder of the rolls mentioned are vegan.
