Decent but could be better - Edit
Cute little shop in a small town. I stopped in because there was no line and I needed carbs post hiking. There weren’t many options, but I made it work. Can easily customize the sandwich to add or remove as needed.

There are far less vegan options, as of today 7/25/24 there is one vegan option. The avocado toast. It was good but again options are very limited.

Fun vibe! Veg choice: Guanella green forest sandwich is excellent! Can be made vegan minus cheese & dill sauce & sub in some honey mustard & add banana peppers - mmm so good! Lunch partner had green pork chili with toasted homemade bread, also excellent. Quick stop off the interstate, fast service, excellent food & friendly staff, what more can I say - Even had a huge jade tree, 35 yrs old!

On the website it says they can sub hummus for the dill sauce, you can no longer do that. I added baked tofu, to the veggie option they had, and said no cheese or dill sauce. They no longer have chili, but they have chips and drinks you can get

The Green Forest (no cheese, replace Dill spread with pesto) is an okay sandwich. Adding some Dijon gives it a little extra something. Nothing to rave about, but it’s nice to have an option!

Few Vegan Options, Weird Service - Edit
The menu is not clearly labeled as to what is vegan, but that’s probably because there’s not much. I was going to build my own sandwich with tofu but they were out, so I got a bow of soup. It was fine, pretty normal veggie soup. The staff is not very knowledgable about what is vegan/can be made vegan. I asked if the Reuben could be made vegan and the staff did not know.

Great Vegan Sandwich & Chili! - Edit
Stopped in Idaho Springs while traveling & found this deli on Happy Cow, it was great! I had the Green Forest Sandwich (minus dill sauce add vegan pesto) and the Spicy Veggie Chili, loved them both!

My husband and I both got the Green Forest sandwich with pesto (non dairy) instead of the dill. Delicious and fresh tasting! Also had an almond milk latte that was great. Great vibe and friendly and accommodating staff.

This spot is located a quick detour from I70. The folks were friendly and the food was great. I had the black bean chili, which was full of veggies including broccoli, squash, carrots and more. It was pretty spicy so you might want to try a taste first if that's not your thing. I also had a half "green forest" sandwich without the dill sauce. Great sandwich!
