Maki rolls are tasty but only unintentionally vegan

I’ve been the restaurant on several previous visits to the area and it does have vegan options but has no labeling on menu to indicate this. It feels like the options we get are ‘unintentionally vegan’ and they aren’t catering to vegan patrons.
The maki rolls have multiple options and good ones to try include spring roll (misleading name because it’s maki and not in fact a spring roll) and the sweet potato but ask to leave off the eel sauce. Miso soup and edamame also good options. One warning if you’re trying to veganize menu items, I saw the salad my non vegan relatives ate and would avoid that! Even without the ton of ranch dressing they dumped on it (why ranch?) it was just lettuce and cabbage.
Ambiance is typical hibachi joint and is dated but clean.
