We found two potato taquitos on the menu that are vegan—“carne asada” made from mushrooms and “al pastor” made from chickpeas and topped with pineapple. Both were delicious!

Tasty Taquitos - Edit
I ordered the potato taquitos with garbanzo beans al pastor and no queso fresco. It's served with avocado sauce, shredded cabbage, pickled onions, cilantro, and radish. The taquitos were crispy and flavorful, but salsa is also available.
