Fresh, quick and tasty - Edit
Edit: As of August 2023, they have disappointingly removed their vegan menu. Still some options available on request, but nothing special.

Although they don't do much to advertise it, The Shelbourne always has some vegan options available.
The breakfast is huge with sausages, mushrooms, tomatoes, beans, toast and had avocado and spinach with pinenuts last time I was there. No vegan spread, but I asked for some balsamic instead which was fine.
I usually order the tacos, which are two soft shells absolutely stuffed with sauteed peppers, onions and mushrooms, lettuce, salsa and vegan mayo. Comes with a side salad and fries. Really very tasty.
The coffee is good and strong, and if you're happy to wait a little they'll bring you a vegan bun from the bakery.
It's busy and loud at lunchtime, so be prepared!
