Comprehensive staff - Edit
Although the vegan options are few, the staff is very friendly and willing to modify non-vegan menu items. The food is good, not excellent, but reasonably priced. The space is laid back, it’s nice to sit there and have a coffee, no rush or pressure.

They make everything in house which is also awesome.
Vegan cheese and vegan mayo also available to substitute.

Enjoyed a vegan chai-spiced cupcake which was very tasty. They also offered a range of other vegan friendly baked goods such as pretzels, a chocolate cupcake, cinnamon twist, et.al.

I am an avid coffee drinker; I like it strong and drink 3-4 cups a day. I got a drip coffee from the Penny today and it is the best coffee I have ever had! AWESOME! Plus they have vegan soup and dessert. It's tough to find decent vegan desserts when travelling outside the major cities.

Nice place, but not great for vegans - Edit
I like this cafe very much. It was full of people, and had a great ambiance. Friendly staff too. But it's not a great place for vegans, or strict vegetarians. First of all, none of the menu items are clearly marked, and it wasn't easy to figure out what I could eat. It was sort of dependent on which staff member you asked. None of the baked goods were marked vegan. I had a good falafel and soup. Nothing to get too excited about, but capable.

A Veggie Gem - Edit
The Penny is an unexpected treasure in downtown Lethbridge. I was delighted to discover that many of the dishes on their menu were vegetarian with lots of options to make things vegan. Because the food is made from scratch- the ingredients are simple and the staff are able to tell you what is veggie friendly. Lovely people, great ambiance.
