Serves meat, vegan options available. A unique restaurant, with a view of the natural springs, is situated in a historic building, located inside the DeLeon Springs State Park Recreation Area. Each table is equipped with a griddle and the staff brings pitchers of in-house-made pancake batters and you make them yourself at your table. Offers vegan pancake mix, vegan sausage, granola, fruit, and vegan pancake toppings (or mix in batter), like pecans, bananas, and blueberries. Please note you do have to pay the park entry fee in order to dine. Reported closed September 2023.

Fun breakfast experience in Old Florida - Edit
As a Florida native, I know that once I venture off the beaten trail, I better be prepared to bring my own food. Rural, rustic Florida is not synonymous with vegetarian, let alone vegan, food. That's what makes the Old Spanish Sugar Mill so cool. I have memories of coming here as a kid, swimming in the spring, hiking, etc. and it is awesome that I can enjoy it many years later, this time, there's vegan make-your-own-pancakes and vegetarian sausage (both of which you cook on a griddle built into your table). This is a place you go to for the experience, of the restaurant and of the DeLeon Springs State Park it sits inside. It doesn't have an extensive veg menu but I'm grateful for what they do have, and it is excellent. Friendly staff, reasonable prices. You can sit outside and enjoy the scenery while waiting for your table. It was busy when I went but only had to wait about 10 minutes. Also, they have molasses, my favorite sweetener, right next to the maple syrup. Nice fuel up before going kayaking.

Fun Experience, amazing vegan pancakes! - Edit
Pancake/Griddle House I've been visiting at De Leon Springs since I was a little kid. Located in the old sugar mill. I haven't been in years but went with my family recently and was very happy to see they have vegan, gluten-free pancakes! I wasnt sure if I'd like them but they were actually awesome (I prefer it over the non-vegan batter I used to have here back in the day!). So many amazing toppings you can get with them-- blueberries, bananas, pecans and more + maple syrup. I definitely recommend coming here, putting your name on the waiting list, going for a 1 hour swim, and then coming back to enjoy your vegan pancakes!😄Yes, you cook them yourself at the table but that's part of the experience. Please encourage them (on their reviews or in person) to carry vegan sausage. Right now they only have vegetarian sausage. They also have a garden burger a PB&J, but I highly recommend the pancakes!

Vegan Pancakes? - Edit
Rustic restaurant in park, a nice destination, if you’re interested in all the other activities. If you just want lunch or breakfast paying six dollars to get into a park it’s kind of silly.

The pancake mix was fairly good (granted I’ve never had vegan pancakes), the sausage replacement is vegetarian sausage, not vegan sausage. The menu says they have a veggie burger but doesn’t say if it’s vegetarian or vegan. The wait is long but the staff is friendly and food and experience is worth the wait. It’s also right next to the springs that are open for swimming, boating, and fishing. This is one of my favorite day trips to take with family despite the limited food options!!

Amazing! - Edit
This is my boyfriend and I’s favorite place to go. The pancakes are so good and so is the vegan sausage. It’s really hard to find breakfast as a gluten free vegan and they offer gluten free pancakes which is also amazing because I’m allergic, and it’s one of the only places that you absolutely know your food isn’t getting contaminated with meat/dairy/allergens because you cook it yourself on your table!

Great family fun (vegitarian sausage is NOT vegan) - Edit
If you are looking for a day out with the family and a fun new experience, this is great. Be sure to get your name on the list as soon as you get there as the weekends and summer months are very busy. Then you will have 1.5-2 hours to play in the Springs before your table is ready. Ask for the gluten free/vegan pancakes. Most to toppings are vegan as well. The kids will lo e cooki g on ghe table griddle! Note, the vegitarian sausage is NOT vegan as the other review suggests. Unfortunately they use Morningstar.

Beautiful location and fun dining experience! - Edit
I have been going to the Old Spanish Sugar Mill with my family since I was a kid. The non-vegan pancakes are delicious, and I loved cooking pancakes on the griddle at our table. Well, I was THRILLED to find out they now offer vegan and gluten free pancake mix and vegan sausage! Both are pretty tasty. I like to add in optional blueberries, bananas, and pecans to the pancakes. They also offer fresh orange juice. Unfortunately they do not have vegan milks for coffee yet. The restaurant is located inside the State park and overlooks the springs. It's a great family place. Go with time to take a short nature hike, swim in the springs, boat ride, walk in the butterfly garden, or paddle around the park. On weekends or holidays, there can be a long wait for the restaurant. The restaurant is small because it is located inside the old historic building. The remnants of the mill are just beside the building.
Read moreAlso, while they do offer meat products like bacon/ham, the meat is cooked out of sight in the back kitchen. So, you don't have to watch the meat eaters cook their food. However, eggs are cooked on the griddle. Each table has a griddle, so it's only a problem if you dine with people in your party who eat eggs.
Also, it's not really a con, but please be aware that you have to pay park entry to eat at the restaurant because it is located inside of the park.
