Healthy tofu options - Edit
The restaurant had plant milks for coffees/lattes, some fresh juices, and gluten free/vegan options. The GF bread is not vegan. Most egg dishes could be subbed with blocks of sautéd tofu (not scrambled). Has potential to be better, but some little details like a large solid scoop of hard coconut oil on top of the waffles to replace butter could have been done better to let it melt, or offering real maple syrup as an option would have e been nice. The ambiance was also a bit too quiet and could have used some music. Service was good.
Read morePros: Adaptable menu, Good options, Friendly service
Cons: Fruit was good but could be a little fresher, A big scoop of coconut oil not a 1:1 butter sub

do not waste your money ! - Edit
We were one of the first customers on Saturday morning when they opened. We had read good reviews but even though the cafe was bright colors, great artwork it didn’t make up for our service and food. The ‘hostess’ who seated us was totally uninterested in what she was doing and even though there were booths open - seated us at a small table- no problem … but she was not pleasant. Same with our wait person- no interest ( and they were not busy at that point) just take the order- we asked about the bread that came with the huevos and veggie hash- he just said gluten free no explanation about options. We received our food and the huevos was just a white ( unheated) tortilla with a few beans and tons of salsa on top. Nothing else for $17.00 no butter in the bread, no vegan cheese no veggies! The ‘veggie’ hash did not have any veggies and was a glutinous mash of a little tofu, black rice and sweet potato and dry bread. - no veggies evident! another $17.00 . we asked about vegan butter and vegan cheese but no response. it was really bad- do not go there for food if you are a vegan - you will just waste your money!

Love - Edit
Separate vegan menu available. The vegan huevos rancheros is so tasty and comes with a lot of food. Make it even better by adding some home fries on top. The tofu scramble is the best that i’ve had. They also have coffee options with oat milk. Without a doubt my favorite spot for vegan breakfast in MT!

I’d eat here again - Edit
Separate vegan menu. I got the tacos with a half chia waffle and my husband had the huevos ranchero.
Read moreMine was excellent, the mushrooms and tofu were plentiful and the pico was fresh. A squeeze of lime finished it off perfectly.
The waffle had a good texture and I enjoyed the coconut “butter,” coulis and fresh fruit with it. It was sweet enough that it didn’t need any syrup.
My husband said he would eat the huevos rancheros every day if he could. That was a big plate of food too!
The coffee was out of this world good
Pros: Well seasoned, Avocado was perfect, Colorful and tasty

Separate Vegan Menu, which is great. But the food was just OK. Also note: a couple of “Vegan” options has honey listed as ingredients.

All good for having a seperate vegan menu but the dish I ordered was flavourless. The mushroom bacon just tasted like fried mushrooms. Just underwhelming. To top it off they forgot one of our dishes.

So thankful to have choices here. The quinoa waffle with raspberry coulis was the fam fave. The vegan standard and mom’s burrito were filling but the tofu was a bit underseasoned. The watermelon basil Juice was delicious!

The vegan menu is small but mighty. There are about 8 options. I wish the options were a little more diverse. But considering that this is an omnivorous restaurant, Nova is top notch.

Vegan menu is on the backside of the regular menu. We had the huevos rancheros and mushroom bacon tacos. Nice spice on the huevos rancheros and would order again. The mushrooms in the tacos were not crispy. Overall good flavor, just not what I was expecting based on the description. The pico was good.

Great experience! - Edit
Although it just blends in with rest of the menu online, in person, everything is clearly labeled as vegan or gluten free which was amazing. They have a whole section of the menu which is vegan as well. I got the vegan burrito in a bowl and it was SO much food and delicious! Very cool diner atmosphere and everyone is so kind and friendly.

Super Yum! - Edit
I took my boyfriend here for brunch and it was super yummy! I ordered the "forager omelette" but asked for it to be made vegan. The waitress was very accommodating and explained what substitutions they would make. It was more like a tofu scramble, but it was really good. They also had non-dairy milk options for lattes and some vegan bakery. I got a vegan lemon loaf--a one portion lemon bread--and I really enjoyed it.

At the Nova cafe you can have a separate vegan menu upon request. They serve smoothies, breakfast bowls (sweet and salty) and have dairy free milk. It is definitely a nice place to be especially for brunch on sundays.

Plenty of options - Edit
I stopped here in May 2019. Just passing thru town, so only had one meal here. They had a home made lentil burger, vegan waffles, a fried green tomato sandwich (that I presume was vegan if done without chèvre, but I don’t know), and any scrambled eggs can substitute tofu. I asked the waitress about the lentil burger and if it was vegan. She assured me it was (without the cheese, of course). Bummed to hear they have a vegan menu and she never mentioned it. Anyways, the burger was good. It’s a knife and fork burger, as the ciabatta is tough and thin and not the best bun to pick up. And they had an almond cheese to put on it (not listed on the menu), but they up charge $1 for it, even tho it meant I didn’t have the other cheeses it could have come with. Overall it was very good, and I would eat there again. I would’ve gladly given it four stars for quality, but the petty up charge for almond cheese and not saying or stating that they have a vegan menu when I was clearly asking vegan questions lowered a star.
