We loved this place. You can modify any salad to be vegan or build your own.

Amazing healthy salad bar with TONS of options - Edit
There are now three The Mixx locations in the Kansas City area - Overland Park, Power & Light, and the Plaza. All are the same set up, which is an order-at-the-counter system where you can choose between signature or customizable salads, sandwiches, soups, and quinoa bowls. When I say customizable, I mean it. There are SO many options, from types of greens, to all sorts of veggies, to different kinds of beans, to nuts, seeds, grains, tofu, and more. They often have a vegan soup of the day, and also offer some vegan desserts.
