I'm meh about this place. We went at a busy time and asked if we could sit at the bar. We sat down, not knowing we had to order up front (first timers). They saw us sitting there with nothing and no one bothered to tell us the ordering routine. So, wasted 15 minutes, then had to get in the line to the door. Had the vegan hub skillet ($12)... I expected they'd replace the sausage and cheese with vegan versions... nope. It was a skillet that was 95% potatoes, with a tiny amount of onion and peppers, a tiny slice of toast, and a bit of kale. Since it was one of the menu items listed as possible to veganize, I expected more than potatoes. Won't bother to try anything else there.

I had an avocado and hummus sandwich on le quarter bread (a local bakery). The sandwich was excellent, the staff was very friendly, and the atmosphere had an fun buzzing vibe. The only other vegan options were avocado toast, and a blueberry granola bowl.

One-of-a-Kind Brunch Stop - Edit
2022 Nebraska Passport destination Hub Cafe is a one-of-a-kind, "locally-sourced, farm-to-fork, made from scratch" restaurant in downtown Lincoln. Their ever-changing menu currently offers quite a few vegetarian options, a handful of which can be made vegan. While I was there, I heard one of the broistas explaining all the vegan options over the phone. My drink and food were both mouth-wateringly good, but my favorite part was the cute table marker. (Mine had a dog on it. 😊)

New American with something for everyone - Edit
I love the atmosphere and vibe of Hub Cafe, along with it's convenient location next to a lot of bike trails. Vegan and vegetarian options are clearly labeled and the staff know what they're doing. I went with my omnivorous family, including some picky eaters, and every one was able to find something to their liking. They use a lot of fresh / local ingredients. The food was flavorful and inventive.
