Dinner at Tanma was a complete experience! It is currently by reservation only (per their website and their posted sign), although they did begrudgingly squeeze in a few walk-ins during our visit. The dining room is VERY small, so it’s definitely best to make a reservation.
There are clearly marked vegan options on the menu, and the staff are knowledgeable.
The owner takes the time to chat with every table, and she gives each table a quick lesson on how to properly taste, sip, and slurp the ramen. This definitely encouraged me to enjoy the ramen more mindfully!
It is not the salty, greasy ramen that you are used to (and she will explain why), but it is nevertheless deliciously comforting. I loved the ramen lesson!
I discovered Tanma about six months ago and enjoyed dining there a few times. The atmosphere is relaxing and the decor is just a little offbeat, the food is phenomenally fresh, and the service is sincerely helpful, and you won't be disappointed if you take the time to allow Yoko, the owner, to explain the proper way to eat ramen. The complimentary ice cream is, alas, not vegan, but the tofu chashu and housemade vegetable gyoza are. No longer reservation only!

Delicious ramen. Broth made from scratch. Yoko and Kazuma are incredibly warm and welcoming. One of my favorite places to eat in the Hudson Valley.
