They had a good variety of vegan and vegetarian items that were all pretty tasty and very affordable. it's super cute and fun that they were on little plates on a model train that continually drove around in a circle and you could grab what you want as it went past.
Overall, I love Sushi Ichiban. They have a lot of vegan rolls, a couple of vegan bao options, a decent vegan ramen, and it's very affordable. It's a solid choice for cheap and fast vegan sushi, but so far there aren't any rolls that blow me away. The vegan ramen is good but it's somewhat mid (the miso broth could use bolder flavoring, maybe more spice). But, I'm never sad to eat here.

Apparently everything on the menu can be veganized, as long as the order is not meat-centric. Vegetarian meals are denoted by a V, so specify to your server that you want it vegan. The staff was very accommodating and helpful!

The vegan sushi rolls were pretty good, but not as good as others I’ve had. If you’re looking for a cheap, very casual place this would fit the bill. A bit rough around the edges with odd decor, but staff were friendly and attentive.
I'd give 5 stars if possible. This place seems at first to be a hole in the wall but with the sushi train and vegan options it can't be missed. Try the Eliza or Caboose rolls, they're fantastic. You can grab from the train if you know what the vegan rolls look like, or I usually just ask the chefs to point them out to me as they come by (they're super nice and helpful and will make vegan options by request too!) Not to mention this place is CHEAP. Like most train places they charge by the plate and I always leave super full for under 10 bucks.
