Ok Veggie Sushi - Edit
Mediocre veggie sushi in my opinion. It will satisfy your sushi craving though, which is most important. Good miso soup (ask for it vegan, it is not automatic), good agedashi tofu. Ask for their vegan menu!

Fresh Veggie Sushi - Edit
Stopped here to grab a bite to eat on a road trip and it was delicious! All really fresh veggies and the soy sauce was very tasty. There are a lot of veggie rolls which almost all can be made vegan.

Best all veg sushi options I've had and the cucumber salad was delicious too! PS, the miso soup is not vegan.

Good sushi in downtown Missoula - Edit
Supposedly some of the noodle dishes can be made vegan, but we just had the sushi. There is a variety of vegan sushi available - avocado, cucumber, various mixed veggies, fried tofu, etc. The vegan sushi was quite good. Tamari is also available. The owner recently revamped the menu to make it more vegan and vegetarian friendly. We were told the miso soup was vegan, but it might be a good idea to verify this yourself.
Read morePros: huge variety, vegan sushi, fried tofu
Cons: not clear which noodle dishes are vegan
