This is an Omni 2 Michelin star restaurant inside the Waldorf Astoria that will provide an all vegan dining experience if you notify them ahead of time. They don’t just remove the dairy— they use thoughtful substitutions and even ferment their own coconut dairy. My experience here was mind blowing! The watermelon in particular was my favorite dish with these little balls of horseradish. It reminded me very much of vegan sashimi. The shiso with olive and morels was another personal highlight. I would give this place 5 stars except that they are not vegan.
