Inconspicuous restaurant in a village just outside Chichen Itza. There is a small menu with typical Mexican dishes. The dishes listed as vegetarian are vegan. There are fajitas and guacamole, which I can highly recommend. I didn't try the tacos. Jamaica tea and lemonade were also above average. According to the owner, the food, tortillas and drinks were all homemade. So if you're travelling through, make sure you stop here for a bite to eat. I have not found more authentic cuisine in my time in Mexico.

Cheerful restaurant near Chichen Itza - Edit
Roadside restaurant a few miles from Chichen Itza. Offers 3 vegan options: guacamole, tacos, and fajitas. We ordered all 3. Of course we liked the guacamole. The fajitas seemed to be the best entree choice as it was more food for the same price. The tacos have hard tortillas so they are not 'typical' American tacos.

Panuchos! - Edit
These tacos were surprisingly good for a vegan option at a meat focused place in a small town. These are called panuchos which are tacos that have tortilla stuffed with (very little) beans. The vegan option is really just a taco without the meat, so it may not be that satisfying, but it was tasty. Your best option if you are in the area. Very nice service too.
