Fresh, delicious, vegan and vegetarian friendly - Edit
Thanks to Happy Cow, we ended up here for dinner after a day of hiking many mikes. This is an attractive, chic and small restaurant. There are many vegan and vegetarian rolls. The seaweed salad and house salad were great. One fun thing I tried - you can have the sushi chef surprise you with a “chef’s choice” roll. I ordered it and it was so beautiful. The chef put sprouts, spinach, carrot, asparagus, avocado in the roll and topped it with a sriracha sauce and paper thin jalapeños. It was fun. This is a restaurant any sort of eater will like, including omnivores.

Best meal I’ve had in Utah! - Edit
Traveling while vegan is rarely easy, but Sabaku made it feel so natural. Their attention to detail was perfect, the vegan freestyle roll was awesome! If you can manage dessert, the dessert roll is a must!

I’d give it 5 stars but app says that’s reserved for only fully vegan restaurants. Really appreciated the outdoor seating too. The rolls were exceptional. 🤙

Delicious vegan sushi - Edit
As a local I’ve eaten here countless times over the years. They have many creative, and changing, vegan sushi options, and I’ve never had one I didn’t like! Everything on the menu is clearly marked, and the servers are friendly and knowledgeable. Nice quiet atmosphere, great date spot. Only can’t give it 5 stars cuz they serve a lot of seafood and some meat.

Their place has quite a few vegan sushi options on the menu, that are clearly labeled. The food was great. However it seems quite busy during happy hour (17:00 to 18:00 when I was there). Made us wait until after to place out takeout order. However, it was well worth the wait. Tasted super fresh.

While in Moab, we found this restaurant and gave it a try (I never had a good experience with vegan sushi and rolls since going vegan and was doubtful about the taste...).

We particularly loved the Garden Veggie Rolls (inari, avocado, asparagus, cucumber, greens, tomato, ginger sauce) and the Dream rolls (asparagus, avocado, inari, macadamia nuts, sweet sauce) but everything was delicious from the miso soup and edamame to the Kappa Maki and Inari Sashimi.

Vegans best option in Moab - Edit
Specialty vegan/vegetarian menu with gluten free option too. We tried all 6 specialty vegan rolls and they were really good! Ate there twice during our 4 days in Moab. Three types of seaweed/sea vegetable salads that we also really liked. Highly recommend for vegans who travel to Moab. Rolls are small though.

Not your usual sushi place - Edit
This is a great restaurant! Very original AND tasty dishes: southwestern edamame (with togarashi and lime), freestyle roll (chef’s choice, today it had greens, avocado, lime, asparagus and a sweet dressing), mango roll (I forget the exact name but it is excellent with mango, avocado, cilantro, sriracha), and the vegan dessert was yummy: orange in plum wine. We love Japanese food (vegan) but this was above and beyond our expectations! Would give it 5 stars but I can’t because it isn’t a vegan restaurant. Definitely try it out!

So many great choices here! We got the southwest edamame which is probably the best edamame I've ever had- with lime and chilies and garlic! I got the mango roll off the vegetarian section of the menu and also a freestyle roll which were both amazing. They have GF soy sauce which is always a plus. My husband who is not vegan loved his sushi rolls as well.

all their tofu on the menu is battered in egg batter. only vegan sushi, nothing cooked is vegan. I got a chef special, which was good, but I was hoping for a more substantial meal than sushi. waitress was helpful tho.

Kitchen Slow! - Edit
Overall nice staff and tasty food, however the kitchen was slow and we had to wait half an hour for two sets of sushi rolls to come out. Also the serving sizes are less than would be expected in the USA.
