Amazing Food! - Edit
They have alot of vegan options to offer. I had a Pulled Planted Rice Bowl with anything vegan ingredients they had to offer. Guacamole was super good and the BBQ Sauce was the best i ever had. Service was super nice

You can choose between a bowl, nachos, tacos and burritos. I went for the bowl with brown rice (you can also choose white) and the pulled plantbased vegan meat, together with peppers, tomatoes, salad, tomato sauce, jalapeño, corn and bbq-sauce. Staff is friendly and can look up what sauce is vegan.

Tasty fresh veggie burrito - Edit
We got a vegetarian tofu burrito and vegetarian nachos to go. Lots of food for a good price. Everything is customizable (even the rice, brown or white) so it can easily be made vegan. Friendly staff too!

A bit 'subwayish' but all I could find - Edit
Fashionable, euro techno playing style place, with food served a bit in a 'subway' style. But had a tasty rice bowl with tofu and sat at the window with a plug socket to get on with my work. Not ideal but nothing else of any worth (or open) that I could find in Brig...

Their website only mentions vegan in general so you have to ask what exactly can be made vegan. But there are currently no better options in Brig, which is quite a small town.
