Ask for the separate vegan menu. I recommend the cauliflower enchiladas. They were seasoned perfectly with an authentic rojas sauce that was absolutely delicious!

You have to ask for the vegan menu specifically! It is only a few options but I am honestly happy when a place offers more than one.
Read moreVery good mexican food... for new england. But good food generally. We got enchiladas with chorizo and the burrito (which are the only two entrees on the vegan menu) and they were both great. Highly recommend.
I wouldn't go back tomorrow since we ate all the vegan options but would return if I am in the area in the future.
Pros: More than one vegan option, Delicious
Cons: Had to ask for vegan menu (others may disagree), Mostly cauliflower as the "protein"

Great options! - Edit
This place was pretty awesome! They have a separate vegan menu you can request with a few great options in each category. Staff is knowledgeable and will help you customize anything you’d like really. I got the nachos with vegan chorizo on them and it was great and a big portion for the price! I also got the yucca fries which were amazing. Definitely recommend!

Although there are only 2 options for the main course, my burrito was enough to feed 2! We also got the loaded nachos with the chorizo (yes ,vegan) added, and to say we were full is an understatement. We sat at the bar and the bartender was really nice. Enjoyed a couple of cocktails, too. We are visiting for a week and we will go back before we leave.

We came to Rio Salado without reading the negative review. I'm very glad we did, sincev the vegan options while not numerous, are quite good.

For our main, we shared the vegan enchiladas with vegan chorizo. It was perfectly cooked and seasoned, and the red sauce left my girlfriend in awe. Given what a foodie she is, that was perfection. We finished up with the plantain dessert and it was well caramelized and flavorful.
Moreover, our server was a great and very personable human being. So thanks Brent! You're awesome!

The fully loaded vegan nachos: holy moly, it was a huge plate. Got both the additional cauliflower, which had a dark sweet sauce on them, and the beyond chorizo, along with pickled onion and fresh jalapenos. The vegan cheese was melted in some places. It was tasty. Excellent and demolished.

We ended with the plantain dessert- temperature hot, caramelized on the outside and sticky and soft on the inside. So good.
I have to mention that our waiter, Brent, was excellent and made sure we got everything represented as vegan, as vegan and delicious. I'd trust going back anytime.

THEY SERVED ME CHICKEN - Edit
DO NOT EAT HERE. Vegans, BEWARE. We ordered off the vegan menu and specifically asked for the VEGAN enchiladas and burrito. The dish that arrived was a chicken enchilada and my fiancé and I both took a bite of it. The manager approached the table after a few minutes with the vegan enchiladas and informed us there had “been a mix up.” So they had time to make the vegan dish, but didn’t have the decency to tell us not to eat what they brought to the table in the first place? Unacceptable. I told the manager we are vegan for ethical reasons and were therefore extremely upset, and he made excuses saying it was only the cook’s second day. If a cook is this incompetent, they shouldn’t be employed in a kitchen. I will never return to this restaurant and advise anyone considering going here to try any of the number of actually good restaurants in the area where your dietary restrictions will actually be respected.

Vegan enchiladas! - Edit
Limited but effective vegan menu- I had delicious cauliflower enchiladas- some well, even have vegan cheese. They have nachos and a dessert option also. Great place for more upscale Mexican and an omnivore friendly group😄

The food here was very good, the menu was small but they said they could veganize most things on the normal menu. Only problem was we found a hair in the chip basket (we got chips and guacamole vegan burrito), but it was an accident. Couldn’t eat the chips after that but my burrito made two meals and could’ve made more!
